One of the biggest, and not to mention best, improvements on today’s pressure cookers is how they deal with the pressure. Gone are the days of the old noisy cookers that would literally shake, rattle and roll. Cookers like the All American Pressure Cooker Canner release pressure automatically if it rises above a safe level.

In fact, today’s cookers will not allow you to remove the lid unless the pressure has been totally released. One way of releasing the pressure is to do it naturally. All that this means is that you remove it from the heat and let it stand alone. As time goes by and the heat dissipates, the pressure goes away on its own.

The other way is to use the quick release that you’ll find on most all of today’s pressure cookers. I’d go as far to say that if you are considering buying one and it does not have an auto-release, don’t buy it.
